A Chef between Apulia and France
The story of Chef Salvatore Lega is the result of an intertwining of experiences lived during his journey starting from Salento, his homeland, all the way to the magical French capital, Paris. In that land, our chef earned various qualifications in the world of French gastronomy and gained the necessary experience that led him to open several prestigious restaurants.
Bistrot
Adopted for the first time in Paris in the 1800s, it later spread throughout France, and it may be an expression derived from "Bistroquer", the name once given to winemakers or wine merchants' assistants.
To this day, it is usually used in place of restaurant, tavern or bar: in reality, the term originally meant tavern, and over time it also took on the meaning of a small café.
Over the centuries, bistros have evolved along with the customs of society, undergoing various metamorphoses, and from places where one could originally enjoy a good wine or a good coffee, they have become a small paradise for good food lovers as well.
These venues can be compared to small restaurants with an informal atmosphere, where you can savor typical dishes at slightly lower prices than those of actual restaurants, with the difference that at bistros you can simply sit down to have a drink or a coffee.
